I always thought kale tasted like bitter, dirty socks. I know it’s a “superfood” (who decides that?) but it never turned out right when I was the one doing the cooking.
Until one day I discovered: I was just doing it wrong. I watched a cooking video where kale was massaged with avocado so that it became soft, crunchy, and sweet. Later, I read kale shouldn’t be sauteed for more than 3 minutes to preserve its texture and flavor.
There are thousands of these little plant-based cooking secrets that I started writing down a few years ago, and I decided to turn them into a food blog. Tofu Test Kitchen is my place to share the best ways to cook plant-based.
I’m Nina. I’m a certified plant-based chef living in Portsmouth, NH with my husband Steffen and our houseful of rescue pets. My favorite things include animals, trails in the woods, and dinnertime. I’m a sucker for enchiladas, fermentation experiments, and cashew cheese.
I also work at Compassion in World Farming USA, the leading international nonprofit working to end factory farming. It’s a wonderful organization full of passionate people who wake up everyday trying to make the world a better place for animals.
