- 3 cups grated broccoli stems, carrots, & cabbage
- Juice of 1 lime
- 2 cloves garlic, minced
- 2 jalapeno peppers, diced
- 2 green onions, diced
- 1 cup Just Mayo (or other vegan mayo like Hellmann’s vegan dressing)
- 1/4 tsp salt (adjust to taste)
- 1/2 tsp agave syrup
- 1/4 cup cilantro, chopped
Combine all ingredients in a large bowl and stir to mix evenly. Serve chilled.
Due to the current shortage of Just Mayo, I recommend trying Hellmann’s new eggless vegan mayo. You can find it in most grocery stores, or here on Amazon.
